Spicy Ginger Cookies

Today, I baked a spicy ginger cookie that I’d like to share with you. It is quick and easy, full of protein, and boasts the healthful benefits of ginger. Ginger is a spice with a potent flavor that is great for warming the body and adding kick to foods. Its medicinal properties include:
• Soothes nausea, motion sickness, and other stomach upset

Spicy Ginger Cookie (PHASE 1,2,3 Compliant)

1/4 cup Steviva Blend

4 tablespoons butter, melted

2 tablespoons ginger

1/4 teaspoon baking soda

2 cups almond meal (I used Trader Joe’s brand and it worked well.)

1/4 cup plain, unsweetened, whole-fat yogurt

Preheat the oven to 275 degrees. Place all ingredients in a mixing bowl and mix with a spoon until well combined. Measure by the tablespoon and roll into small balls of dough. Place dough on a baking sheet lined with parchment paper. Using the back of a fork sprayed with cooking spray, flatten the cookie by making a criss-cross pattern. Bake for 15 minutes. Remove from the oven and let stand for a few minutes on the baking sheet before removing with a spatula onto a plate to cool. Be careful, the cookies will crumble easily when still warm. Let cookies cool before eating.

  1. I used dried, ground ginger in this recipe, but next time I might try adding some freshly ground ginger in addition to the dried ginger for an even stronger depth of flavor.
